A growing need for gluten-free alternatives

For some, a gluten-free diet is just a step towards a more healthy lifestyle. But for the increasing number of people suffering from Celiac Disease or gluten sensitivity, it’s a crucial element to their wellbeing. 

For those diagnosed with celiac disease – a chronic inflammatory autoimmune disorder – consuming gluten means destroying the lining of 

the small intestine. When this happens, absorbing nutrients into the bloodstream becomes next to impossible, which only leads to more serious health complications. 

Even the tiniest amount of gluten can have a huge impact on someone with celiac disease. By FDA standards, a product has to have less than 20 ppm (parts per million) to be considered gluten-free. This is the equivalent of one teaspoon in 65 gallons of liquid! While this might sound minuscule, long term exposure to even small amounts of gluten for those with celiac increases the risk of serious health problems. 

 

Our standards

We take that 20 ppm and cut it in half. Chuckanut Bay Foods is certified through the Gluten-Free Certification Organization (GFCO), a program of the Gluten Intolerance Group of North America. GFCO is one of the leading gluten-free certification programs in the world and also has some of the strictest standards. 

The GFCO standard is 10 ppm or less, half the level defined by the FDA. When you see our products carrying the GF logo, you can rest easy knowing it has met some of the strictest gluten-free standards around.

Our process means Gluten-free goodness every step of the way

Our gluten-free desserts require a very controlled process and special attention to be sure there is no contamination or contact with any gluten-containing ingredients. Before production can begin, our facility is fully sanitized to minimize the chance of any airborne gluten coming into contact with it. Then the real fun begins!

  1. The ingredients are gathered and measured by one employee and then double-checked by another.
  2. These ingredients are then mixed per their recipe and brought to the production line.
  3. The production line deposits the crust and batter per the specified weights for the product that is being produced.
  4. The GF products are baked in our ovens until they have reached the required temperature – this is first checked by a trained and qualified employee, then verified by another employee.

 

 

  1. The product is cooled, molds removed, and the weight recorded before going into our freezer.
  2. Our Food Safety Compliance Offer tests the finished product for gluten proteins then documents that the product has passed the gluten testing.
  3. The frozen product is then distributed to our packing employees by their packing supervisor and has a triple verification process before beginning to pack.
  4. Once the product is packed, it is palatalized onto the customer’s pallet and verified once more.

 

 

The Food Safety Compliance Officer documents each day that there is a run of gluten-free products produced. The test results are recorded and submitted to the Gluten Intolerance Group of America each quarter for review. And it doesn’t stop there…

Each year, we are also audited by the Gluten Intolerance Group of America. This process checks everything from our sanitation and manufacturing process to our testing and recall programs. They also look closely at our product and ingredient lists to ensure everything is up to the required standards. 

This highly controlled process and documentation guarantee our products continue to remain gluten-free from start to finish.
